This Laboratory makes analyses of the characteristics of dairy products and the properties of lactic acid bacteria (LAB) on a molecular level with the help of all this modern equipment. The Laboratory works on the implementation of externally funded projects under which special analytical systems for assessment of LAB’s beneficial effects to human health were introduced and the foundations of probiotic properties were studies on a molecular level, such as: adhesion to muscular and epithelial tissues in the intestinal tract, immunostimulation, cholesterol level reduction, antioxidant effects, reduction of free radicals, release of bioactive peptides with antihypertonic potential and facilitating the absorption of calcium. The Laboratory has also a sub-laboratory for cell lines which is of great importance in the evaluation of numerous beneficial properties of lactic acid bacteria.
